Product Description
The 2008 growing season was virtually identical to that of 2007. Our rainy season was over by March and we had a dry and warm spring. We experienced threats of frost in the late spring but nothing serious. We had moderate temperatures throughout the summer months, ending with a nice slow ripening period. Yields were low and not for the obvious reasons such as few bunches on the vine but because cluster and berry size were tiny from a water deficient year. For a number of years now, we've seen production really drop off in our Cabernet blocks. These twenty plus year old vines are moving into a conservative phase and are starting to produce smaller clusters that weigh very little. We normally harvest our Cabernet Sauvignon last and let it hang out there to get riper flavors and sweeter tannins, 2008 was an ideal year to do that in. I used 60% new French oak from my favorite cooperages and 40% were from one year old French oak. It is 100% Cabernet Sauvignon, a blend from both Cabernet blocks on our ranch. Unfined and unfiltered.
