Product Description
The clone 362 block tends to experience more intense heat and wind resulting in smaller berry sizes and a more exposed fruit zone with less canopy. This block is pruned and shoot thinned aggressively to separate the clusters. Multiple passes are made through the rows before, during and near the end of veraison to ensure good berry separation, even color maturity, and removal of any damaged fruit. Grenache is one variety that benefits from a longer hang time to help develop complex flavors in the skins and juice. We manicure each cluster accordingly as to utilize a percentage of whole clusters in the fermentation to preserve aromatic complexity and add a great savory component. We do perform a bleed off of 10% of the juice for our Rose' program resulting in a higher skin to juice ratio giving us more concentration in the final wine. This wine was blended with less that 10% Syrah to add weight to the mid-palate and was bottled unfined and unfiltered.
